※ 2 tbsp olive oil

※  1 onion, diced

※  4 cups vegetable or chicken broth (low-sodium if possible)

※  1 can (14 oz) cannellini beans, drained and rinsed

※  1 cup small pasta (like ditalini or small shells)

※  2 cups chopped kale

※  1 tsp dried thyme

※  Salt and pepper to taste

※ Optional: Grated Parmesan cheese for serving



Putting it all together

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until softened.

  2. Add butternut squash and garlic. Cook for another 2 minutes, stirring frequently to prevent sticking.

  3. Pour in diced tomatoes, broth, and thyme. Bring to a boil, then reduce heat and simmer for 15 minutes, or until squash is tender.

  4. Add beans and pasta. Cook for about 10 minutes or until pasta is al dente, stirring occasionally to prevent pasta from sticking.

  5. Stir in kale and cook for another 3 minutes until wilted.
